Autumn & Winter – A la Carte

Here are our Head Chef’s fresh ideas from the kitchen for you this autumn winter.  We have used as many seasonal ingredients where possible which means local, fresh ingredients, supporting local suppliers.

 

Starter

Smoked trout parfait with watercress and roasted hazel nut dressing

Pumpkin, crushed walnut and rocket risotto with dark pumpkin seed oil

Oriental scallops and king prawns with glass house noodles and fresh chill dressing

Warm salad of Welsh black beef fillet, roasted shallots and oyster mushroom

Carpaccio tuna, marlin and cucumber with fresh Pak Choi and ginger dressing

Chestnut mushroom and thyme soup with garlic croutons

Creamy risotto of butternut, toasted cashew and sautéed leek

All served with homemade breads

 

Main Course

Slow roasted pork belly with slow roasted cinnamon plums

Local lamb shanks cooked in a rich red wine and sweet tomato coulis

Roasted breast of Gresham duck with grilled Clementine’s

Braised Welsh beef with kidney & wild mushroom in a dark jus

Guinea fowl, shallot and button mushroom pie in Gwynt y Ddraig cider

Oaklands organic chicken wrapped in Carmarthenshire ham with rocket and truffle oil

Lemon sole and Pembrokeshire crab paupiette with fresh wilted spinach

Fillet of Welsh black beef with caramelised shallot gravy (£3 supplement)

Roasted root vegetable open lasagna in a creamy mascarpone sauce and fresh herbs

Butter bean and butter nut pie

All served with suitable, seasonal and sensible vegetables!!!

 

Dessert

Pear and apricot upside down cake with ice cream

Rhubarb and custard mousse with almond tuile’s

Dark coffee cream brûlée with a chocolate truffle

Welsh cheese board with homemade chutney and fresh fruit

Lemon posit with orange zest cookies

Vanilla short bread stacks with black berries and sugared apples

 

£35.00 per head plus VAT

Chef £45.00 one cost

Hire of glasses, crockery and cutlery @ £0.25p / item

Hire of linen table cloths @ £5.00 each

Hire of linen napkins @ £1.00 each

Hire of Waitress @ £10.00 per hour (4 hour minimum)

Hire of Supervisor @ £12.50 per hour (4 hour minimum)
